I'll take a look at both of them when I have a chance..

I read both of the guides but they all refer to pre-kara gear, is there another one that's based on epic stuff that we can get from AH, Rep, or Vendor?

Don't hold your breath waiting though, most of the gear guides now are for WoTLK contents

Too many changes between TBC & WoTLK for most classes is what I've glimpsed while browsing, so I'm not so sure of finding guides that will fit us now.

Actually, protadin is the general term.

For raids/instances, we prefer to be called tankadin

For leveling up / grinding / normal mobs, we are called porcupinadin

Those holy type that uses cloth gears to help heal are called pyjamadin/pajamadin

Retri type are generally called retn00b

Holy type that uses mail gears to help with +spell damage = shamadin
